Rocky Road Chocolate Muffins

Recently I bought a new cookbook, 1 Mix, 100 Muffins, and I couldn't wait to try some of the recipes. Basically the concept is that every single recipe is made from the same basic muffin mix, you just add a few different ingredients to each one. And there are so many different recipes to choose from. So easy, and so good! MMMM!





I couldn't wait to make one of the recipes, and finally today I had some time, so I did. I chose Rocky Road Chocolate Muffins.




They turned out SO GOOD, so I thought I had better share :)
Makes: 12 muffins
You will need:
         *oil or melted butter for greasing (I used Pam spray)
         *heaping 1 1/2 cups all-purpose flour
         * 1/2 cup unsweetened cocoa powder
         * 1 T. baking powder
         * 1/8 tsp. salt
         * heaping 1/2 cup superfine sugar (I used regular sugar)
         *heaping 1/2 cup white chocolate chips
         *1/2 cup white mini marshmallows, cut in half
         *2 large eggs
         *1 cup milk
         *6 T. sunflower oil or melted, cooled butter at room temperature (I used canola oil)
Directions:
1) Preheat oven to 400*. Grease muffin tins. Sift together the flour, cocoa, baking powder,and salt into a large bowl. Stir in the sugar, chocolate chips, and marshmallows.


2) Lightly beat the eggs in a large pitcher or bowl, then beat in the milk and oil. Make a well in the center of the dry ingredients and pour in the beaten liquid ingredients.Stir gently until just combined; don't overmix. 

3) Spoon batter (I use an ice cream scoop) into the prepared muffin pan. Bake in the preheated oven for about 20 min. (mine didn't take that long) until risen and firm to the touch.


4) Let the muffins cool in the pan for 5 minutes, then serve warm or transfer to a wire rack and let cool completely.

    I made these on the weekend and they were amazing!!! My husband and I got one each and our two girls ate the rest.. they were really nice and chocolatey and the marshmallows went nice and chewy on the top.... Well done, they were truly fab.
