This morning Jeven wanted me to make her Crepes. It's one of her favorite things. They are SO GOOD :)
I actually learned how to make them in school in Home Ec. class, and I've been making them ever since. I think it's the best and easiest recipe.
Crepe Batter
3 eggs
2 T. butter melted (I use unsalted)
2 T. sugar
1 1/4 cup flour
pinch salt
1 1/4 cup milk (I use 2%)
1/2 tsp. lemon extract
Crepe Topping
1/4 cup sugar
4 tsp. cornstarch
1/3 cup water
3 cup berries (use the frozen kind.... I use 1/2 strawberries, and 1/2 blueberries. I buy the kind that doesn't have sugar added to them).
Crepe Filling
Light Cool Whip
Mix all batter ingredients with a mixer for a few minutes....so there are no lumps and it's a smooth, liquid consistency. Set aside.
Add all of the topping topping ingredients into a saucepan and mix together. Then heat on medium until bubbly, then set to low until needed, stirring often.
Now, to make the crepes, it's very easy. Put a scoop of the crepe batter into a heated skillet (I heat mine on medium) and then tilt the pan with a circular motion so the batter coats a good amount of the surface and is quite thin. Of course it's up to you how big or small you make them, just try a few and you'll get the hang of it :) Heat it for just a minute or two on each side, until each side is lightly brown. This will not take long, barely a minute or two.
When the crepes are done, fill a line down the center with the Cool Whip, then roll it up. Top it with the berry topping and you'll have yourself a breakfast (or any other meal or snack!) fit for a King :)
