
1 cup whole wheat flour
1 2/3 cups unbleached flour
2 cups oats (quick or old-fashioned)
1 cup firmly packed brown sugar
2 T.baking powder
1 tsp. salt (optional)
1 tsp. cinnamon
2 cups skim milk

2 eggs
6 T. canola oil
2 cups fresh blueberries
Topping: 2 T. firmly packed brown sugar, 1/4 tsp. cinnamon, mixed together.
Preheat oven to 375*. Combine first 7 ingredients. Mix milk, vanilla, eggs, and oil. Add to dry ingredients and mix just until moistened. Add blueberries. Sprinkle topping over the top. Pour into a 9X12 baking pan that has been sprayed with non-stick coating. bake 35-40 minutes or until golden brown.
