If you're in the mood for ham and cheese potatoes, I have the perfect dish for you. Plus it's a crock-pot meal, so of course it's super easy! Yae :)
Ingredients:
26 oz. package Potatoes O' Brien (found in the freezer section--I bought the kind with added onions and green peppers...great for extra flavor)
3 TBSP. Vegetable oil
2 cups cooked ham, cut into bite size pieces
2 10 3/4 oz. cans cream of potato soup (if you use Campbell's soup brand for this soup, it has MSG in it--just so you know)
1/2 cup grated Parmesan cheese
16 oz. sour cream (I use light)
8 oz. shredded cheddar cheese
Fry potatoes in oil according to package directions. Then transfer to slow cooker. Add remaining ingredients and stir well. Cover and cook on low for about 3 hours. Enjoy!
